Today I share a super simple Omelette Curry recipe with you, which is one of the favorite dishes for all egg lovers. This curry is not unique, but some different from other regular boiled egg curry. Omelette Curry is a bit spicy and so delicious. You can enjoy this Omelet Curry with rice or paratha.
- 2 medium size Potatoes (Cut in fingers)
- Onion paste – 2 pcs big size
- Ginger paste – ½ tsp
- 1 big Tomato (pureed)
- Garlic paste – 1 tsp
- Garam Masala powder – ½ tsp
- Turmeric powder – ½ tsp
- Red Chili powder – 2 tsp
- Salt as per taste
- Sugar as per taste
- Muster oil – 3 to 4 tbsp
- Eggs – 3 pcs
- Onion(chopped) – 2 pcs medium size
- Green chilies (chopped) – 3 to 4 pcs
TIME REQUIRED : 40-45 minutes
We need to prepare Omelette at first, all of which you know how to prepare but, still, I ‘m telling you as quickly as possible. Whisk the eggs with salt, onion, and green chilies. Heat some oil in a frying pan. When the oil is hot, pour the egg batter in the pan and cook on low flame till batter gets dry and color come light golden brown. Do the same process on the other side. remove from the pan cut the Omelette into 1-inch square and keep aside.
Heat some oil in a pan and fry the potatoes until soft and color come brown. remove from pan keep aside.
Now again heat some oil in a pan, add onion paste and fry for 2 min. Now add one by one garlic, ginger, and saute for another few mins.
Add Tomato puree, turmeric powder, red chili powder, salt, and some sugar. mix it very well. Stir the masala until it is detached from the oil. Then add water mixture to become dry.
When it’s boiled Now add the fried Potatoes, Omelette pieces, and garam masala and mix them gently. Add some warm water and cover it with a lid and wait for 5 mins.
when the curry becomes a thick turn off the flame. Serve warm with roti or rice.
