Chicken Fried Rice is one of those interesting comfort foods, which is light and protein-packed dining choice, and you can make it fast and can be served by itself. The best thing about Chicken Fried Rice is if you enough to have any left, then you can make perfectly delicious leftovers with it and the ingredients are pretty simple and you can add anything to it like paneer, egg, vegetables. - Rice – 1cup (Use short-grain rice)
- Bonless Chicken (boiled) – 500gm
- 2 big size onion(chopped)
- Garlic(minced) – 1tsp
- 1 medium carrot(peeled & diced)
- Capsicum(diced) – 2tbsp
- Red bell pepper(diced) – 1 cup
- Dark soy sauce – 2tbsp
- Freshly ground black pepper to taste
- Vinegar – 2tsp
- Vegetable oil – 2 to 3 tbsp
- Salt as per taste
- Sugar as per taste
TIME REQUIRED : 10 mins to prepare and 15 mins to cook
Heat oil in a large Kadai. Add the onion, then cook until they begin to soften. Mix in the minced garlic and cook for about 30 seconds, until fragrant, after that add chicken, and toss well. Cook for a couple of mins.
Add chopped capsicum, carrot & bell pepper Cook for a further 2 minutes, stirring constantly.
Now add rice keep tossing for a few mins. Toss everything together with a spatula, and make sure the rice doesn’t stick to the bottom of the pan, now sprinkle some salt, pepper, and sugar, mix it very well.
Pour in the remaining soy sauce and vinegar and toss well. Now! remove it from the heat and serve the Chicken Fried Rice immediately. You can garnish with spring onion or whatever you think it looks awesome.
